Big Easy Roasting works differently. We roast in small batches and ship within days, so the aroma bloom you smell when you pour hot water over fresh grounds is still there, not lost in transit. That bloom is the first sign you're drinking coffee that's actually fresh, not just coffee that says premium on the bag.

French Roast
A blend of high-quality beans from Brazil and Central America, Vieux Carré is a deep, full dark roast with rich body and chocolate depth, perfect black. The brightness carries through to the last sip. Bold enough for a café au lait, smooth enough for a quiet Tuesday morning.

100% Colombian Arabica
Named for the raw cane sugar that defines Colombian coffee culture, Panela is grown high in the Andean cordillera where cool mountain air slows the cherry growth and builds the sugar. This single-origin, medium roast coffee is naturally sweet, with notes of caramel and stone fruit. No blending, no shortcuts, just the bean doing what a great bean does.

New Orleans-Style Cold Brew
A medium-dark blend of high-quality coffee beans from Brazil, Colombia, and Sumatra is crafted specifically for an 18 to 24 hour cold steep. Italian Roast Espresso | Very Dark | Pushed Past the Edge
This one shoves you into the day instead of easing you in. We roast it deep into second crack until the bean gives up every trace of sweetness and leaves nothing but char, smoke, and bitter resolve. It tastes like a gas station on the A1, the kind of cup a trucker grabs at 5am somewhere between Genoa and nowhere. Drink it with lots of sugar and get moving.

Dark Roast with Chicory | Built for the Marsh
Chetta grew up on coffee and chicory, so we built her a blend that keeps that habit alive. We kept a Brazilian and Robusta backbone then added chicory for the earthy depth she loves. It drinks full and round, with the chicory softening the edges and carrying the whole cup. Perfect before a morning walk down Carr Drive or checking her crab traps, or on the porch at La Te Da.

Jason's Marsh Dawn is dark roast done with restraint. Pulled deep, but stopped right at the point where depth and brightness still share the same cup. It is a sunrise coffee.
